Can you solve a Mystery?

Guess who I am using the clues below. I could be a plant, animal, bird, tree, insect, arachnid (spiders), or amphibian found in Colorado.

1. I like to spend my days buried underneath rocks in the South Platte River.

2. If you happen to startle me or I get scared, I will use my tail to shoot my body backwards.

3. Some people think I look like a mini lobster.

4. I won’t bite you, but I may give you a little pinch with my two front claws.
